Minestrone Soup
I started with a traditional minestrone soup recipe, but had to remove things when I went gluten-free and low-carb. I removed the corn, pasta, and white beans which got rid of gluten and a lot of carbs. This makes a huge pot of soup, a gallon, so I freeze it in 2 cup portions. It makes a great quick meal or snack.
Ingredients
- 2 Tablespoons high-temp cooking oil such as avocado, coconut, or butter
- 2 teaspoons garlic, chopped
- 2 stalks celery, chopped (about 1 cup)
- 2 pounds ground pork
- 1 teaspoon fennel seed
- ½ teaspoon ground black pepper
- 1 teaspoon crushed rosemary
- ¼ teaspoon ground cloves
- 2 teaspoons red pepper flakes (optional)
- 1 Tablespoon sweet Hungarian paprika (optional)
- 1 small head cabbage, chopped
- 2 large carrots, 1/2 pound, chopped
- 1 full bunch, Swiss chard, about 8 large leaves, torn in bite sized pieces
- 3 quarts low-fat chicken broth
- 2 Tablespoons dried parsley flakes
- 2 Tablespoons fresh basil, chopped
- 10 oz bag white pearl onions, peeled
Instructions
- Heat coconut oil in a very large soup pot, and saute the garlic, celery, pork, fennel seed, and black pepper until pork is brown. Add the rosemary, cloves, paprika, and red pepper flakes, cook and stir for one minute.
- Add the cabbage, carrots, chard, chicken broth, rosemary, and cloves to the pot. Bring to a boil, reduce heat, cover, and simmer for 1 hour.
- Add the parsley, basil, and pearl onions to the pot. Simmer until onions are cooked, about 15 minutes.
Notes
This freezes really well. It is a huge batch of soup (about a gallon), so I put it into 1 or 2 cup storage containers and freeze. I can just grab a container and heat the soup for a quick snack or meal.
To peel pearl onions: Bring a pot of water to the boil. Drop in the onions, return to the boil, and boil 3 minutes. Drain and plunge the onions into cold water. The skins slip easily off.
