Artichoke Mushroom Crust-less Quiche
I used to make an Artichoke Mushroom quiche regularly, especially for my vegetarian friends. But since I’m eating extremely low carb, the crust had to go.
Here it is hot out of the oven. I do not usually let the top get so brown, but my oven is inconsistent, so sometimes it gets a little darker.

Ingredients
- 1 Tablespoon butter
- 8 oz fresh mushrooms, sliced
- 1 14-oz can artichoke hearts in water
- 4 ounce white cheddar cheese, shredded (about 1 cup)
- 1 cup whole milk
- 4 large eggs, beaten
- 1 teaspoon Italian herb blend
- 1/2 teaspoon seasoned salt
- 1/8 teaspoon pepper
- 2 oz hard grated cheese (such as asiago, parmesan, or romano)
Instructions
- Preheat oven to 375 F. Spray a 9-inch pie pan with olive oil.
- Melt butter in a medium skillet. Sauté mushrooms until cooked and slightly brown. Remove from heat.
- Chop artichoke hearts into small pieces. Mix artichokes with mushrooms. Spread the vegetable mixture in the bottom of the pie pan. Spread the cheddar cheese evenly over the vegetables.
- In a small mixing bowl, beat the eggs with the milk until well blended. Stir in the herbs, salt, and pepper. Pour mixture evenly over the cheddar cheese in the pie pan.
- Sprinkle the grated hard cheese evenly over the top.
- Bake the quiche at 375 F for 35 to 45 minutes or until a knife inserted in the center comes out clean. Check after about 25 minutes. If the top is already brown enough but the quiche is not finished cooking, cover the top with a piece of aluminum foil and continue cooking.
