Braised Lime Pork Chops
I make braised pork chops a lot in the summer because they are quick and easy and do not heat up the kitchen much. These braised lime pork chops add the surprise of lime juice when most people would expect lemon. This provides a refreshing light au jus.

Ingredients
- 2 thick cut pork chops (about 6 ounce each)
- 2 Tablespoons butter
- 1 teaspoon chopped garlic
- 1/2 cup white wine
- 1/2 cup chicken broth
- 1/4 cup lime juice
- 1 teaspoon dried marjoram
Instructions
- Melt the butter in a skillet over high heat. Brown the pork chops on both sides.
- Add the garlic to the pan, stir and brown quickly.
- Reduce the heat to medium and carefully add the white wine. (It may pop and spatter.)
- Simmer the pork chops in the wine 5 minutes on each side. The wine should be greatly reduced. If you need to, add some water to the pan to continue cooking the chops.
- Add the chicken broth to the pan, cover, and simmer on low until the pork chops are cooked, about 15 minutes. Pork chops are done when the internal temperature is at least 145 F.
- Remove the pork chops to a plate and let rest while completing the sauce.
- Deglaze the pan with the lime juice. Add the marjoram and stir well, scraping up any brown bits. Cook and stir until the sauce comes to a boil. Serve on the side as an au jus for the chops. This sauce is also nice over veggies.
