Broccoli Onion Crust-less Quiche
I had a goal to make 3 different quiche recipes that were basically interchangeable in terms of macro-nutrients and calories. That makes planning meals easier for me – pick one of these things for breakfast, one of those things for lunch, and they match with one of those things for dinner. I also wanted another vegetarian dish. So along with my Artichoke Mushroom Crust-less Quiche and the Spinach Mushroom Crust-less Quiche I now have this broccoli onion crust-less quiche.
I had to work it a bit because BH did not like my first version where I cooked the broccoli more and used mozzarella cheese. This version the broccoli is cooked but still firm. Using all cheddar makes it creamier as well.

Ingredients
- 1 Tablespoon butter
- 1 small onion (about 4 oz), chopped
- 1 teaspoon chopped garlic
- 1/2 pound fresh broccoli, cut into bite sized pieces
- 4 ounce white cheddar cheese, shredded (about 1 cup)
- 1 cup whole milk
- 4 large eggs, beaten
- 1/2 teaspoon seasoned salt
- 1/8 teaspoon pepper
- 2 oz grated hard cheese such as Asiago, Parmesan, or Romano (about 1/2 cup)
Instructions
- Preheat oven to 375 F. Spray a 9-inch pie pan with olive oil.
- Melt butter in a medium skillet. Sauté onion, garlic, and broccoli until the onion is soft and translucent. Remove from heat.
- Spread the vegetable mixture in the bottom of the pie pan. Spread the cheddar cheese evenly over the vegetables.
- In a small mixing bowl, beat the eggs with the milk until well blended. Stir in the salt and pepper. Pour mixture evenly over the cheese in the pie pan. Sprinkle the hard cheese evenly over the top of the eggs.
- Bake the quiche at 375 F for 35 to 45 minutes or until a knife inserted in the center comes out clean. Check after about 25 minutes. If the top is already brown enough but the quiche is not finished cooking, cover the top with a piece of aluminum foil and continue cooking.
