Paleo Brussels Sprouts and Bacon
Brussels sprouts and bacon is one of my favorite meals. It has a lot of bacon and bacon fat in it. You may find it too rich if you are not used to a higher fat diet. I eat 2 cups of this for a meal and I am not hungry for many hours after!
This recipe, whether for a meal or side dish, works well on a Paleo and even Keto diet. The Brussels sprouts are so high in fiber that the effective carbohydrate count is very low.
The original recipe was for Brussels sprouts, bacon, and chestnuts. I really loved that dish, but chestnuts are too high in carbohydrates for me. So I removed the chestnuts and greatly enjoy this version of the dish.
BH hates Brussels Sprouts, so I make Brussels sprouts and bacon recipe for me. I eat one serving and freeze the other 2 servings for later meals. It freezes and thaws quite nicely.
Ingredients
- 1 1/2 pounds Brussels sprouts (small ones if you can get them)
- 1 pound bacon
- 2 Tablespoons butter or ghee
Instructions
- Clean the Brussels sprouts, put them in a pot of water, bring to a boil, reduce heat, cover and simmer for 15-20 minutes or until soft.
- While they are cooking, cook the bacon until done to your liking. Drain the bacon on paper towels, then crumble or use kitchen shears to cut the bacon into bite sized pieces. Keep the bacon fat - you will use it soon!
- When the Brussels sprouts are cooked, drain them and let cool until you can handle them. Cut the Brussels sprouts in half (helps the fat absorb). If the sprouts are large, you might cut them into 3 or 4 pieces. Heat the bacon fat over medium heat, add the sprouts to the pan, cut side down, cook and stir until the bacon fat is absorbed. Add the butter or ghee and stir well.
- Mix in the bacon crumbles and enjoy!

Yes, this is very fatty. And very yummy. I have tried making this without the butter and it just does not taste as good.
This works really well for a keto main dish. With all the fiber, the carb count is really low. The protein is modest and the fat is high.
