Canadian Bacon Egg Bites
I was thinking of grab and go type breakfast food and thought Canadian bacon egg bites could work really well. They can be prepared a night or two before needed, refrigerated, then grabbed in the morning for a breakfast on the run. They can be eaten either hot or cold.
I made these egg bites in a silicon muffin pan and hot water bath. I used Canadian bacon, but you can make almost infinite variations with whatever little bits of stuff you want to include.
Because I intended these for a grab and go meal, I cooked them until the yolks were hard. You can make eggs the same way in ramekins and serve hot from the oven. If you want runny yolks, just reduce the cooking time by 5 minutes.
Ingredients
- olive oil cooking spray
- 3 slices Canadian Bacon (0.6 ounce per slice)
- 6 large eggs
- Morton Nature's Seasons Seasoning Blend
- 6 Tablespoons grated cheddar
Instructions
- Preheat oven to 375 F
- Spray the wells of a 6 cup muffin pan with the cooking spray. Put the muffin pan into a 13x9 baking pan.
- Cut the Canadian bacon slices in half. Finely chop each half and put in the bottom of the muffin wells.
- Carefully crack open each egg and put it whole on top of the bacon bits. Sprinkle the top of each egg with the seasoning.
- Spread 1 tablespoon of cheddar cheese on top of each egg, being sure the whole top is covered.
- Add steaming hot water to the 13x9 pan until the water comes about half way up the sides of the muffin pan. In my pan, this was about 2 1/2 cups of water.
- Carefully put the 13x9 pan into the oven. You don't want to get water on the eggs or spill it on yourself.
- Bake 20 minutes. Carefully remove the pan from the oven and put on a heat proof surface. Carefully lift the muffin pan out of the hot water.
- Let the egg bites sit for 5 minutes, then run a knife around the sides to loosen. Put a plate on top of the muffin pan, turn the whole thing upside down, and the egg bites should just drop out of the pan. You can put another plate on top of the eggs and flip again to get them cheese side up.
Notes
I used a silicon muffin pan. The big advantage is if the egg bites stick in the pan, you can press the bottom and pop them out.
