Keto friendly Confetti Eggs
Keto friendly confetti eggs with finely chopped colorful veggies and healthy fats makes for a great first meal of the day.
I call these confetti eggs because I take colorful veggies and put them in the food processor so they are chopped into little bits. They look like colorful pieces of confetti!
I like these eggs with salsa and sour cream, but they are good without as well.
Here are my ingredients before cooking:

Ingredients
- 1 cup finely chopped veggies of choice (I used carrots, broccoli, and cauliflower in the photo)
- 2 large eggs
- 1/2 teaspoon Morton Nature's Seasons Seasoning Blend (or salt and pepper to taste)
- 1 Tablespoon butter
- 1/2 cup shredded cheddar cheese
- 1 Tablespoon taco sauce (optional)
- 1 Tablespoon sour cream (optional)
Instructions
- Bring a pot of water to boil. Add the veggies and return to a boil. Boil for 3 minutes. Drain and set aside.
- Beat the 2 eggs with the seasoning.
- Melt the butter in a skillet. Stir in the cooked veggies. Add the eggs, cook and stir, until the eggs are scrambled and cooked to your liking.
- Turn off the heat. Stir in the cheese until it is well melted. Put the eggs on a plate and top with taco sauce and sour cream if desired. Nutrient count includes taco sauce and sour cream.
