Dried Porcini Mushroom Gravy
My theater buddy Kimber Gray cannot use any flours or gums for thickening flour. I promised to figure out a way to make a nice gravy using blended veggies. This dried porcini mushroom gravy has a bold taste that goes well with strongly flavored dishes. For something lighter, see my Fresh White Mushroom Gravy

Ingredients
- 1 ounce dried porcini mushrooms
- 2 ½ cups water
- 2 tablespoons butter
- ½ cup chopped onion
- ½ cup finely chopped carrot
- ½ teaspoon minced garlic
- ½ teaspoon Italian herb blend
- ¼ teaspoon salt or to taste
- Black pepper
Instructions
- Put the mushrooms and water in a pot. Bring to boil, reduce heat, and simmer 15 minutes (until mushrooms are tender). Remove the mushrooms from the broth with a slotted spoon. Strain the liquid through a fine mesh or a couple of layers of cheesecloth. Set aside. There should be about 1 cup of cooking liquid.
- Melt the butter in a skillet. Sauté the onions , carrot, and garlic until the veggies are cooked and soft. Put the veggies and mushrooms into a blender. Add the herbs, salt, a couple of dashes of pepper, and the reserved cooking liquid. Blend well.
- Check the seasoning and thickness. Add some water or vegetable stock if you want a thinner gravy, blending well. Taste and adjust the seasoning.
Notes
The seasoning is versatile. Instead of Italian herbs you might use poultry seasoning. You might use less herbs than I did. Or for a more savory version, try adding ½ teaspoon tamari (gluten free soy sauce), 1 teaspoon dry sherry, or both!
