Egg Stack
An egg stack is basically a breakfast sandwich without the bread. I found a non-stick mini pan (with a handle) that is 4.75 inches in diameter. This is perfect for making a 2 egg breakfast stack.

Ingredients
- 1 Tablespoon butter
- 2 large eggs
- 1 slice cheddar cheese (1 ounce)
- 1 slice Canadian bacon or ham (0.6 ounce)
Instructions
- Melt the butter in a mini fry pan (4.75 inch diameter). If you have a larger skillet, then you need a metal ring about 4.5 inches in diameter and about 1.5 inches tall. Melt the butter inside that ring.
- Crack the eggs into the butter. Break the yolks with a fork or point of a knife.
- Cook the eggs until the whites and yolks are hard. I usually flip them when the bottom and sides are solid but the top needs a bit more cooking. I cook over low heat, so it takes about 5 minutes before they are ready to flip. Then flip and cook about 1 minute more.
- While the eggs are cooking, heat a small skillet. Brown the Canadian bacon on both sides. Remove from heat.
- Once the eggs are flipped, put the cheese on top of the eggs. Put the Canadian bacon on top of the cheese. Wait about 1 minute for the cheese to melt a bit. Put a heat proof plate on top of the mini pan and flip it over.
- If you are using an egg ring, use a stiff spatula to lift the egg stack, put the plate on top of your metal ring, and flip the plate and spatula over.
Notes
This is also very nice with 1/4 cup of Hollandaise sauce poured over the top.
