Fresh White Mushroom Gravy
My theater buddy Kimber Gray cannot use any flours or gums for thickening flour. I promised to figure out a way to make a nice gravy using blended veggies. This fresh white mushroom gravy has a lighter flavor that goes well with poultry, rice, and potatoes. For something bolder, see my Dried Porcini Mushroom Gravy

Ingredients
- 4 ounce chopped white button mushrooms
- ½ cup chopped onion
- ½ cup finely chopped carrot
- ½ teaspoon minced garlic
- 2 Tablespoons butter
- 1 cup vegetable stock
- ½ teaspoon Italian herb blend
- Black pepper
Instructions
- Sauté the mushrooms, onion, carrots, and garlic in the butter until the veggies are cooked and soft. Put the veggies in a blender, and add vegetable stock, herbs, and a couple of dashes of pepper. Blend well.
- If you want it thinner, add more stock. Taste and adjust the seasoning.
Notes
The seasoning is versatile. Instead of Italian herbs you might use poultry seasoning. You might use less herbs than I did. Or for a more savory version, try adding ½ teaspoon tamari (gluten free soy sauce), 1 teaspoon dry sherry, or both!

A Life in Harmony
Adding rosemary and thyme sounds wonderful. I tend to keep herbs and spices on the lighter side in my dishes because it is easy to add more. I’m really glad you enjoyed it.
I made this last night and it was amazing! I doubled the recipe, used avocado oil instead of butter, and added rosemary and thyme. It was so good and I’ll definitely make it again. A lovely meal of gravy, with chicken and sweet potatoes on the side! lol
