Gluten-free Condensed Cream of Mushroom Soup (corn or tapioca starch)
In this version of gluten-free condensed cream of mushroom soup I use corn or tapioca starch to thicken the soup. I tried rice flour in the past, but the soup was very heavy and tasted strongly of rice. This version is silky smooth, tastes like mushrooms, and has a lot less carbs than flour based versions.
For an even lower carb version, my other Gluten-free Low-carb Condensed Cream of Mushroom Soup (xanthan gum) uses xanthan gum as a thickener. That reduces the carbs to only 5 grams per serving, compared to 9 grams for this one.
Ingredients
- 2 Tablespoons butter
- 8 ounces mushrooms, chopped in small pieces (about 225 grams)
- 1/4 cup onion chopped (about 50 grams)
- 1 teaspoon chopped garlic
- 1/2 cup heavy cream
- 1/2 cup chicken broth or vegetable broth
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 2 Tablespoons corn starch (or tapioca starch) dissolved in 2 Tablespoons cold water
Instructions
- Melt the butter in a 3 quart saucepan. Add the mushrooms, onions, and garlic. Saute until the onions are soft, the mushrooms are cooked, and there is not much water remaining.
- Add the cream, broth, salt, and pepper to the skillet and heat until simmering.
- Add the corn starch mix, stirring continuously. Continue stirring as the soup simmers and gets thick. Cook for 1 minute.
Notes
I like the texture making this with cornstarch. For gluten-free folks who cross-react with cornstarch, then I'd use the tapioca. It is not as smooth as the cornstarch, but you probably will not notice the difference in a casserole.
I like the chunks of mushroom. If you like a smoother soup, at the end let the soup cool a bit then blend it in batches to the consistency you like.
