Gluten-free Low-carb Condensed Cream of Chicken Soup (xanthan gum)
In this version of gluten-free low-carb condensed cream of chicken soup I use xanthan gum to thicken the soup. Because it takes a very small amount of xanthan gum, it only adds 0.5 grams of carbs to each serving. All the rest of the carbs are from the onion, garlic, and celery.
If you do not like to use xanthan gum, my other Gluten-free Condensed Cream of Chicken Soup (corn or tapioca starch) uses cornstarch or tapioca starch as a thickener. That does increase the carbs to 9 grams per serving (compared to 5 grams per serving for this version).

Ingredients
- 2 Tablespoons butter
- 1/4 cup onion chopped (about 50 grams)
- 1/4 cup celery chopped (about 25 grams)
- 1 teaspoon chopped garlic
- 1/2 cup heavy cream
- 1 teaspoon chicken soup base or bouillon powder dissolved in 1/2 cup hot water (or take 1 cup broth and reduce to 1/2 cup)
- 1/4 teaspoon black pepper
- 1/8 teaspoon turmeric (or paprika)
- 5/8 teaspoon xanthan gum
- 4 ounce cooked chicken cut in small bites
Instructions
- Melt the butter in a 3 quart saucepan. Add the onions, celery, and garlic. Saute until the veggies are soft and there is not much water remaining.
- Add the cream, broth, pepper, and turmeric to the pan and heat until simmering.
- Stirring briskly with a whisk, sprinkle in the xanthan gum. Continue stirring as the soup simmers and gets thick. Be patient; this will take 2-3 minutes. Add the chicken and stir well.
