Gluten-free Turkey Gravy
Gluten-free turkey gravy is pretty easy to make, using 2 Tablespoons of cornstarch in place of 1/4 cup flour in any recipe. But many people with gluten issues cross-react with cornstarch.
So I played with xanthan gum until I figured out the amount to make a nice smooth gravy. Xanthan gum is really easy to use, as long as you keep beating the gravy briskly until it thickens. Otherwise your xanthan gum will clump and not make a nice smooth gravy.

Ingredients
- 2 cups broth and pan drippings from making the turkey
- (or use 1 ¾ cups chicken broth and ¼ cup butter)
- ¾ teaspoon xanthan gum
Instructions
- Put the broth in a saucepan. Heat the broth to a simmer. Whisking briskly, add xanthan gum. Keep stirring for about 3 minutes as sauce thickens.
- Taste and adjust seasoning (salt, pepper, herbs). If the gravy is too thick, add broth a little at a time. If it is too thin, add more xanthan gum 1/8 teaspoon at a time, whisking briskly as you add it, and cooking for 3 minutes before testing thickness again.
