Instant Pot Herbed Turkey Breast
A lot of times I have only a few people for Thanksgiving dinner. So instead of cooking a whole turkey, I make a turkey breast. To save room in the oven for casseroles, I decided to play around with an instant pot herbed turkey breast. I tested it out well before Thanksgiving, so I know it works.
If your turkey breast is already seasoned, you do not need to add the herbs. I still like to put some butter on the outside of the breast. Even if the turkey does not need it, there will be some nice fat for my gravy when the cooking is done.
Be sure to make my Gluten-free Turkey Gravy with the liquid left in the pot.
I have included this recipe in my Low-Carb Gluten-Free Midwest Thanksgiving meal plan. This is a meal plan for a complete Thanksgiving dinner including portion sizes, shopping lists, make ahead schedule, and adjustments for dairy, tree nut, and egg allergies, vegetarians, and further carb adjustments to take it into the keto zone. Ingredients
- 6 pound turkey breast, thawed
- 3 Tablespoons butter, soft but not melted
- 2 Tablespoons dried herbs – I like Italian seasoning blend, or you can go with a mix of equal parts sage, parsley, rosemary, and thyme for a more traditional blend.
- 1 ½ cup chicken broth
- ½ cup white wine (optional)
- Salt and pepper
Instructions
- Mash the butter and herbs together with a fork. Set aside.
- Put the broth, and wine in the bottom of the instant pot. Put the instant pot trivet into the pot.
- Spread the butter mix on the turkey. Season well with salt and pepper and put it on the trivet, skin side up.
- Close lid, make sure pressure valve is closed. Set pressure cooker to manual high pressure for 50 minutes. Let pressure release naturally for 15 minutes. Then turn the valve to open and let pressure finish releasing. Check that the temperature in the thickest part of the breast is 165F or higher. If not, close the instant pot, cook for another 10 minutes, and check again.
- Remove the turkey. If you want to brown it in the oven, put the turkey skin side up on a baking sheet. Turn on the oven broiler. Put the turkey on the lower rack of the oven and cook about 10 minutes or until your desired brownness. Watch the whole time it is cooking and remove it when it has reached your desired brownness. It will brown quickly and you don’t want it to burn.
- Remove turkey to a serving platter. Cover with a foil tent until ready to serve. Carefully pour broth off into a measuring cup to use in turkey gravy. You can make the gravy in the instant pot (use the saute setting) or in a saucepan on the stove.
Notes
The cook time includes the approximate time it takes for the instant pot to get up to pressure.
