Loaded Cauliflower
I really like Cauliflower Cheese, but sometimes I do not want to put in the time to make it. Then one day I thought about loaded baked potatoes. I could do the same thing with cauliflower and have Loaded Cauliflower.
Since BH does not like sour cream, I make this just for myself. The portions below are for a single (large) serving that would be the main course of a meal. Or you could cut the one serving in half and make this a side dish.
If you leave out the bacon, this could be a nice vegetarian main dish. ThisĀ changes the nutrition profile to 6 grams of fiber, 20.5 grams of carbohydrate, 20.5 grams of protein, and 31 grams of fat.
Ingredients
- 2 Cups cauliflower (half a medium head, 10 oz.)
- 1/2 cup finely shredded cheddar cheese
- 1/4 cup sour cream
- 2 oz. cooked, chopped bacon (optional)
Instructions
- Cook the cauliflower by your favorite method (I usually steam for 15-20 minutes). Chop into bite sized pieces and season to taste.
- Put the cauliflower on a plate. Sprinkle the cheese over all then drop the sour cream on top by spoonfuls. If you are using bacon, sprinkle it over all. Serve.
