Meatloaf with Savory Topping
Growing up we had meatloaf topped with ketchup. I did not realize how sweet the ketchup was until I lived in the UK for 2 years. Their ketchup is more vinegary and has a lot less sugar in it. When I gave up sugar, I decided to make meatloaf with savory topping. The sauce I make is also great as a pizza sauce, so I have made a separate recipe for the sauce, which is linked in this recipe.
I put this meatloaf in 2 mini loaf pans – 3 x 5.75 x 2.5 in size. If you want a bigger meatloaf, you can double the recipe and put it in a full sized loaf pan.
Ingredients
- 1 pound ground beef
- 1 Tablespoon cornstarch
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 1 recipe Savory Sauce
Instructions
- Preheat oven to 350 F.
- In a large bowl, mix the ground beef, cornstarch, salt, and egg. Mix well with your hands until it is all well blended. Press the meat mixture into 2 mini loaf pans, size 3 x 5.75 x 2.5 inches. Spread half the savory sauce over each meat loaf. It is a generous amount!
- Bake for 35 minutes, or until interior temperature is 165 F. Let cool 10 minutes, slice and serve.
