Paleo Dark Hot Chocolate
I was feeling the need for some comfort food today and thought of hot chocolate. Most hot chocolate is much too sweet for me on my keto diet, and pretty thin in consistency. I wanted a dark hot chocolate consistent with a paleo lifestyle. So I played around with good quality cocoa powder, heavy cream, a very small amount of sugar, and just a pinch of salt. With the heavy cream, this provides a lot of fat and 1/2 cup was more than enough to satisfy my desire for chocolate. Calories come to about 450 and most of that is the cream. So sip slowly and enjoy!

Ingredients
- 1/2 cup heavy cream
- 2 1/4 teaspoon good quality unsweetened cocoa powder
- 1/2 teaspoon sugar
- pinch of salt
- (optional) 1/2 teaspoon vanilla, orange, or peppermint extract (no sweetener added)
Instructions
- Heat the heavy cream in the microwave for about a minute, until it is as hot as you like it.
- Put the cocoa powder, sugar, and salt in a cup.
- Pour in about 1/4 of the cream and stir well to make a paste. Continue stirring as you pour in the rest of the cream. Add flavored extract if desired and stir well.
