Shirataki Rice Stuffing
Since I am gluten free (for health reasons) I cannot have the traditional bread stuffing with lots of sage and thyme that I grew up with. In my Thanksgiving dinner, I use rice stuffing instead. I have been playing around with shirataki rice as a replacement for regular rice. It is mostly starch, almost no carbs, almost no calories. This works out really well in the Shirataki Rice Stuffing.

Ingredients
- 1 8-ounce packages shirataki rice
- 1 cups diced onion
- 1 cups diced celery
- 4 ounces mushrooms chopped
- 1/2 cup chopped pecans
- 4 Tablespoons butter
- 1 teaspoons poultry seasoning (or more if you like a strong herb flavor)
- 1 cups chicken or vegetable broth
Instructions
- Prepare the shirataki rice according to package instructions. In a large skillet, melt the butter. Add the rice, onion, celery, mushrooms, and pecans. Sauté until the veggies are soft.
- Stir in the poultry seasoning. (If making ahead, you can stop here and put the veggie mix in the fridge until later.)
- Add the broth to the skillet and bring to a boil. Reduce heat, cover, and simmer until the water is mostly gone, about 15 minutes.
