Shirataki Spanish Rice
I have started experimenting with the new shirataki products available. These are nearly zero carb substitutes for rice and pasta. My first try was Shirataki Spanish Rice. I served it with tacos made from extremely low-carb tortillas.
The rice came out fantastic. You can hardly tell the difference between this and the same dish made with regular rice. But the dish with regular rice has about 37 grams of carbs per serving and this version has about 14 grams of carbs per serving. Not only do you save 23 grams of carbs, but that is 92 calories you save as well.

Ingredients
- 1 8 oz package Miracle Noodle Zero Carb, Gluten Free Shirataki Rice, 8-Ounce, (Pack of 6)
- 1 Tablespoon butter
- 1/2 cup onion chopped
- 1/4 cup bell pepper chopped (optional)
- 1/2 cup celery chopped
- 1 teaspoon chopped garlic
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/2 teaspoon pepper
- 1 can 14.5 ounce diced tomatoes, no salt added
- 1 can 8 oz tomato sauce
Instructions
- Prepare the shirtaki rice according to label directions, including the dry cooking to remove excess water. Remove from heat and set aside.
- In a large skillet over medium heat melt the butter. Add the onion, celery, bell pepper (optional), and garlic. Saute until onion is translucent.
- While the veggies are cooking, mix the spices together (paprika, cumin, salt, oregano, and pepper). When the veggies are cooked, add the spices. Stir well and cook for 15-20 seconds, until the spices become fragrant.
- Add the tomatoes, tomato sauce, and shirataki rice to the skillet. Mix well. Bring to a boil, reduce heat, cover, and simmer for about 25 minutes. There should still be some sauce but not a lot.
Notes
This is still a relatively high carb side dish (mostly due to the tomatoes and tomato sauce), but much lower in carbs than making it with rice.
With regular rice, 37 grams of carbs per serving. With shirataki rice, 14 grams of carbs per serving.
