Spinach Mushroom Crust-less Quiche
I like quiche as a vegetarian option in my diet. I have one quiche recipe I really like (Artichoke Mushroom Crust-less Quiche) but wanted something new. I decided that spinach would be the vegetable, then changed up the seasoning and cheese a bit to suit spinach, and of course no crust. Thus Spinach Mushroom Crust-less Quiche was born. Ingredients
- 1 Tablespoon butter
- 8 oz fresh mushrooms, sliced
- 1 teaspoon chopped garlic
- 1 10 oz package frozen, chopped spinach, thawed
- 4 ounce white cheddar cheese, shredded (about 1 cup)
- 1 cup whole milk
- 4 large eggs, beaten
- 1/2 teaspoon seasoned salt
- 1/8 teaspoon pepper
- 2 oz grated hard cheese such as Asiago, Parmesan, or Romano (about 1/2 cup)
Instructions
- Preheat oven to 375 F. Spray a 9-inch pie pan with olive oil.
- Melt butter in a medium skillet. Sauté mushrooms and garlic until cooked and slightly brown. Remove from heat.
- Squeeze water out of spinach. Break apart the clumps of spinach and mix with the mushrooms. Spread the vegetable mixture in the bottom of the pie pan. Spread the cheddar cheese evenly over the vegetables.
- In a small mixing bowl, beat the eggs with the milk until well blended. Stir in the salt and pepper. Pour mixture evenly over the cheese in the pie pan. Sprinkle the hard cheese evenly over the top of the eggs.
- Bake the quiche at 375 F for 35 to 45 minutes or until a knife inserted in the center comes out clean. Check after about 25 minutes. If the top is already brown enough but the quiche is not finished cooking, cover the top with a piece of aluminum foil and continue cooking.
